The Bilona method is mentioned in the Charaka Samhita — an ancient Ayurvedic text. We follow it faithfully, because some things should never be modernized.
Grass-Fed A2 Cows
We source milk exclusively from indigenous Gir cows, raised on open pastures and fed natural grass. These cows carry the A2 beta-casein gene — making their milk gentler, richer, and more nourishing.

Ancient Bilona Churning
The A2 milk is first cultured into curd, then hand-churned in the traditional Bilona method — bidirectionally, in small wooden vessels. The butter is separated from whey, never the reverse.

Slow Small-Batch Cooking
